I have been reading a lot of different snipits on snack foods that are good for you but I have been avoiding them like the plague. I just read the ingredients on the yogurt I bought on sale (deviation from my typical organic plain yogurt brand) and it has corn syrup as ingredient number 3, to top it all off I just want to eat cheese and pimento cheese dip with pretzels. I feel uncreative and unmotivated in the kitchen and have for weeks, ENOUGH IS ENOUGH!
I am not sure when I fell of the wagon, but I did, and getting back on is harder than it looks. I work 45 hours a week right now so I understand busy schedule, I also am avoiding the gym and making excuses like I have to make dinner or we have to do x, y, z. It all stops here. For the next 3 weeks we are on a trip to healthy, fast and cheap meal planning. I am not the best at keeping a budget, but I know that I am on one. Tomorrow is Sunday so don’t forget to buy your paper and clip your coupons, that is what I will be doing after work.
So, start right now because I am going to the market this morning for fresh veggies, after I go for a run or a walk. Get in the freezer and pull out a roast and stick it in the crock pot, it is going to be a busy day of chores around the house. I have weeds to pull and bushes to trim and may even plant some bulbs. Since I have to work tomorrow I am going to start my chili today and get my veggies ready for the week. You will be busy but it will be worth it, I promise.

- apples
- onions
- sweet potatoes
- arugula
- romaine
- tomatoes
- squash (whatever is in season)
- broccoli
- spinach (if it is reasonable)
- lemons
- carrots
- celery
- peppers
