I was at the market and had bought a head of cabbage thinking that I wanted to steam it with some onions, but one morning it was really chilly when I woke up so I decided that soup was in order. This was a small to medium sized head of cabbage.
There is something about creating a soup with the ingredients from your fridge/pantry especially when I am low on vegetables, that really gets me nervous yet excited for the finished product. I remember thinking about half way through making this soup that I should just scrap it.
- 1 medium cabbage cut in to chunks/strips
- 1 medium onion diced
- 6-8 baby carrots or 2 small to mid sized regular carrots diced
- 1/2 red pepper in strips and then halve the strips
- 1 spicy pepper of your choice (I chose a hungarian because it is what I had) if you don’t want spice leave it out
- 4 cloves of garlic
- 1 1/2 tsp curry powder
- 1 tsp cracked pepper
- 1 tsp fresh thyme
- Better than Bouillon not chicken base*
- water to cover
In a stock pot sweat your onions, carrots and garlic in a bit of olive oil or coconut oil until they are just about tender then add the peppers and let them cook for another 5 minutes and add the cabbage on top and put the lid on. Let the cabbage steam for 5 minutes or so then stir while adding the seasonings and stir for a minute or two. Once the cabbage is seasoned move the the crock pot and add the water. Low to medium depending on your urgency, it won’t take long.
Yes, you could do this all in the pot but I had to run some errands so I stuck it in my small crock pot and let it do it’s thing. This is a very low calorie, flavorful soup that many people enjoy.
*Better Than Bouillon, I don’t to a lot of product promoting but this stuff is incredible! They have standard beef and chicken along with not chicken and not beef base. It is a wonderful paste like consistency, has no MSG and a 1/3 of the sodium. You should check it out if you haven’t already!



Your recipe looks WAY better than the cabbage recipe I just blogged about!
